A Few Pictures ...

So this is the sign I saw every single morning. The university is definatly one of the coolest places/areas of town!















This is me, with my constant smile/smirk. I don't have many photos of myself, but Matt Chute decided to borrow my camera and took a few pictures of me. This is the only one you will see!






















Autum is pretty much the most beautiful time in Edmonton! The whole city is covered in luscious green and Golden yellows; with some vibrant reds scattered between.

One year.

Wow! Its been one whole year [actually a year and a week or two]. This time last year I was home from College and Career, thinking about how great it was, and how much fun it was going to be, and all the cool people I would meet.

Now a year has passed by. I remain as single as I arrived, I am super busy with work, and I love myself [this is a good thing believe it or not], and I am loving God in ways that are so awesome!

I want to say thank you to a few really important people over the past year. To Jenna first of all, you are such an amazing friend, and you have been there for me whenever I needed you. You are streaching me even though you are not here with me. There is Mike, Matt, Rob, and Allan. Guys, I am pleased to call you all amazing friends! You are there when I get my keys locked in my truck, or when I am utterly confused, or when I screw up and need a hand you; you are all there! Then all of the wonderful women in my life; Apryl, Cait, and Crystal. You women are amazing! Whenever I need a soft hand up you are there for me, and I appreciate it without end.

I know I've left some of you out, and I'm sorry. But believe me, it is no offense to you, it is my poor memory at 2:00 in the morning.

So here I am. I miss home dearly, but I have made a home for myself here. I have found that the farther away I go from home, the more I long for it.

So now the onus [sp?] is on me. There are a bunch of new people into our College and Career group, and some of them are in the same position I was. They are at a place where everything they once knew is now turned upside down and they are able to start anew. So its time for me to step up to the plate and show them a good time and just love on them!

Well its 2:13 am, and I need to sleep as I want to be in tip top shape for church.

Recipies

Okay, for all of you who asked for my dessert recipie here it is:

For the Panna Cotta:

2 tablespoons water
1 1/2 teaspoons unflavored gelatin [if you can't find it, ask the people at the grocery stor to help you]
2 cups whipping cream
1 1/4 cups vanilla yougurt
1 teaspoon vanilla extract
1/2 cup sugar

Pour 2 tablespoons water into small bowl. Sprinkle gelatin over water. Let stand until softened, about 15 minutes.
Whisk 1 cup cream, yogurt, and vanilla in large bowl to blend.
Heat remaining 1 cup cream and 1/2 cup sugar in small saucepan over medium heat, stirring until sugar dissolves and cream comes to simmer.
Remove from heat. Add gelatin mixture, stirring to dissolve gelatin.
Mix hot cream-gelatin mixture into yogurt mixture in bowl.
Divide mixture among six 3/4-cup ramekins, using about 1/2 cup for each. Refrigerate desserts uncovered until cold, then cover and refrigerate overnight.

For the Balsamic Stawberries:

2 pints of strawberries, hulled, thinly sliced
3 tablespoons balsamic vinegar
1 tablespoon sugar

Toss strawberries, vinegar, and sugar in large bowl to combine.
Let stand 30 minutes, tossing occasionally.
Spoon strawberries over panna cotta and serve.

Note: if needed, berries can be sliced and sugared ahead of time, but only add vinegar about 30 mintues before serving.
